Baked Feta Pasta with Cherry Tomatoes and Shrimp
This simple baked dish is full of flavor, yet takes just minutes to make
Ingredients
- 8 ounces pasta (cavatappi, fusilli, farfalle, etc.)
- 2 pints cherry tomatoes
- 8 ounce block of feta cheese
- 1/2 cup olive oil
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 pound large shrimp, peeled and deveined
- 1 tbsp butter
- 2 cloves garlic, minced
- 1/4 tsp salt
- 1/4 tsp pepper
- 1/4 tsp smoked paprika
- 1/4 tsp dried thyme
- 1/4 cup chopped fresh basil
Instructions
- Preheat oven to 400 degrees. Place tomatoes in a baking dish large enough for a single layer of tomatoes, but small enough that they touch. Pour oil on top and season with salt and pepper. Toss well to combine.
- Place the feta in the middle of the dish and turn to coat with oil. Bake for 35 minutes until tomatoes burst and feta melts.
- While tomatoes bake, cook pasta in salted water and drain, reserving 1/4 cup of the pasta water.
- While pasta is boiling, melt butter in skillet over med-high heat. Add garlic and cook for one minute. Add shrimp and spices. Sauté just until shrimp is pink.
- Remove tomatoes from oven. Use the back of a wooden spoon to mash a few tomatoes. Stir in pasta, shrimp and fresh basil until combined. Serve immediately
Notes
- Any pasta with ridges will work for this recipe. You want the sauce to cling to the pasta.
- Grilled chicken would also be good in this, or leave out the extra protein for a tasty vegetarian version.
