Banana Chocolate Chip Muffins
Quick, easy muffins that are great for breakfast or as a sweet treat any time of day.
Ingredients
- 1 1/2 cups flour
- 1 tsp baking soda
- 1/4 tsp cinnamon
- dash salt
- 1 1/3 cups mashed ripe bananas
- 1 large egg
- 1/2 cup sugar
- 1/3 cup butter, melted
- 1 tsp vanilla
- 1/2 cup mini, semi-sweet chocolate chips
Instructions
- Preheat oven to 375 degrees. Line a muffin pan with paper liners, or grease muffin cups.
- In a large bowl, whisk together flour, soda, cinnamon, and salt.
- In a second bowl, combine sugar, egg, mashed bananas, melted butter and vanilla. Add to flour mixture and stir just until moistened. Fold in chocolate chips.
- Using a large scoop, divide batter between 12 muffin cups. Bake for 15-20 minutes, or until toothpick inserted in center comes out clean.
- Cool pan for 5 minutes before removing muffins to wire rack to cool. Serve warm
Notes
- The darker the banana, the sweeter the muffin. Be sure your bananas are very ripe.
- Dark chocolate chunks or regular sized semi-sweet chips can be used. I like tasting the chocolate in each bite, so I use the minis.
- Cooled muffins can be frozen in freezer bags for up to 3 months.
