Cherry Pistachio Scones
A delicious way to start your morning, or with an afternoon cup of tea
Ingredients
- 2 1/2 cups flour
- 1/4 cup sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup butter, frozen
- 1/3 cup dried cherries
- 1/3 cup chopped pistachios
- 3/4 cups buttermilk
- 1/4 cup heavy cream
- coarse sugar
Instructions
- Remove butter from freezer and grate or chop.
- In a large bowl, mix flour, sugar, baking powder, baking soda and salt. Add frozen butter to dry ingredients and mix until combined.
- Stir in cherries and pistachios. Add buttermilk and stir just until combined.
- Turn out dough onto a lightly floured surface and pat into a circle or rectangle. Cut into 8 pieces.
- Cover cut pieces with plastic wrap or place in bags to freeze long term. Freeze cut pieces for 15 minutes, or up to one month.
- When ready to bake, preheat oven to 400 degrees. Place scones onto a parchment lined baking sheet and brush with heavy cream and sprinkle with sugar,
- Bake for 10-20 minutes until lightly golden. Cool on wire rack,
