Cherry Pistachio Scones

Ingredients
  

  • 2 1/2 cups flour
  • 1/4 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup butter, frozen
  • 1/3 cup dried cherries
  • 1/3 cup chopped pistachios
  • 3/4 cups buttermilk
  • 1/4 cup heavy cream
  • coarse sugar

Instructions
 

  • Remove butter from freezer and grate or chop.
  • In a large bowl, mix flour, sugar, baking powder, baking soda and salt. Add frozen butter to dry ingredients and mix until combined.
  • Stir in cherries and pistachios. Add buttermilk and stir just until combined.
  • Turn out dough onto a lightly floured surface and pat into a circle or rectangle. Cut into 8 pieces.
  • Cover cut pieces with plastic wrap or place in bags to freeze long term. Freeze cut pieces for 15 minutes, or up to one month.
  • When ready to bake, preheat oven to 400 degrees. Place scones onto a parchment lined baking sheet and brush with heavy cream and sprinkle with sugar,
  • Bake for 10-20 minutes until lightly golden. Cool on wire rack,

  • Alternate fruits and nuts to your liking.
