Cucumber Sandwiches–Christmas Tea
What's an afternoon tea without cucumber sandwiches?
Ingredients
Filling
- 1/3 cup Hellman's mayonnaise
- 8 ounce cream cheese
- 2 tbsp fresh mint, finely chopped
- 2 tbsp fresh dill, finely chopped
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1/4 tsp salt
- 1/8 tsp black pepper
Sandwich
- 2-3 English cucumbers, unpeeled, thinly sliced on mandolin or 1/8-inch slices
- 1 16 ounce Pepperidge Farm White Sandwich bread
Instructions
- In a food processor or mixer, blend all filling ingredients until smooth.
- Spread a thin layer of cream cheese mixture onto each of two slices of bread. Arrange a layer of 6 thin slices of cucumber, evenly overlapping on one slice of bread. Place the second slice of bread on top of the cucumber layer. You should have nine sandwiches
- Using a serrated knife, remove crusts from sandwiches. Cut each sandwich into fourths by making an X cut to make 36 triangle sandwiches.
