Pumpkin Bread

Pumpkin bread is a delicious bread to enjoy in the autumn, or anytime you're craving a warm spice treat.

Ingredients
  

  • 15 ounces canned pumpkin puree
  • 3/4 cup canola oil
  • 2 cups sugar
  • 3 large eggs
  • 2 1/3 cups flour
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 3/4 tsp cinnamon
  • 3/4 tsp salt
  • 3/4 tsp nutmeg
  • 3/4 tsp ground cloves

Instructions
 

  • Preheat oven to 350 degrees. Grease and flour 2 8.5 x 4.5" loaf pans. Set aside.
  • In a large mixing bowl, combine pumpkin, oil, eggs and sugar. In a medium bowl, combine dry ingredients; stir into pumpkin mixture until well blended, but do not overbeat.
  • Divide batter evenly between pans and bake for 45-60 minutes or until internal temperature of bread is 200 degrees.
  • Allow loaves to cool on wire rack for 10 minutes before removing from pan. Continue cooling loaves on wire rack until completely cool. Slice and serve or wrap and freeze for up to 3 months.
