Tuna Noodle Casserole
The classic casserole without Cream of Anything soup! So much better than what your mom made.
Ingredients
- 8 ounces sliced mushrooms
- 2 cloves garlic, minced
- 1 medium onion, diced
- 12 ounce package of noodles (I like Mrs Miller's medium)
- 1/4 cup melted butter
- 1/4 cup flour
- 1/2 tsp salt
- 1/2 tsp pepper
- 2 1/2 cups milk
- 1 8-ounce cream cheese
- 12-14 ounces albacore tuna
- 1 cup grated white cheddar or Monterrey Jack cheese
- 1/2 cup dried breadcrumbs
- 2 tbsp melted butter
- 1 tsp smoked paprika
Instructions
- Preheat oven to 375 degrees. Spray a 9×13 baking dish with cooking spray
- Cook noodles according to package directions and drain.
- While noodles cook, saute mushrooms, onion and garlic. Set aside
- In a medium saucepan, melt 1/4 cup butter and whisk in flour, salt and pepper. Add milk, slowly cooking and stirring constantly until sauce is thickened and bubbly.
- When sauce is thickened, blend in cream cheese until melted. Combine noodles, sauce, tuna and mushrooms and pour into prepared baking dish.
- Combine melted butter and breadcrumbs. Add grated cheese and spread over top of casserole. Sprinkle with smoked paprika.
- Bake for 20-25 minutes.
