Better Broccoli and Cheese Casserole
Do you remember that church potluck version made with a pound of butter and processed cheese food? It was delicious, but not the healthiest side dish. This version still has the butter and creaminess but with far fewer calories and less guilt!
Ingredients
- 2 10 ounce packages of frozen chopped broccoli
- 5 tbsp butter, divided
- 1/2 tsp minced garlic
- 2 tbsp flour
- 1 cup milk
- 1/2 tsp salt
- 1/8 tsp pepper
- 4 ounces cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup crushed, Ritz crackers
Instructions
- Preheat oven to 350 degrees. Coat a baking dish with cooking spray and place frozen broccoli in dish
- Melt 2 tablespoons of butter in pan over low heat; add garlic and flour; stir until smooth
- Gradually add milk, and cook over medium heat, stirring until thick and bubbly.
- Add salt, pepper, and cream cheese, stirring until well combine. Remove from heat and stir in half the cheddar cheese.
- Pour sauce over broccoli an mix to combine. Sprinkle with remaining cheddar cheese
- Melt remaining butter and combine with cracker crumbs. Sprinkle over casserole.
- Bake for 35-40 minutes until thoroughly heated.
