Almond Buttercream Cupcakes

White fluffy cake with creamy icing that always make me think of traditional wedding cake. Yes, this recipe starts with a box cake mix, but it becomes something delicious. See notes below for filling ideas and other ways to make these tasty treats into something special

Ingredients
  

Cake

  • 1 Duncan Hines white cake mix
  • 1 cup flour
  • 1 cup sugar
  • 3/4 tsp salt
  • 1 1/3 cup water
  • 1 cup sour cream
  • 2 tbsp canola oil
  • 1 tsp almond extract
  • 1 tsp vanilla extract
  • 4 egg whites

Buttercream Frosting

  • 5-6 cups powdered sugar
  • 2 cups unsalted butter, at room temperature
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp almond extract
  • 2-4 tbsp cream

Instructions
 

  • Preheat oven to 325 degrees. Line cupcake pans with liners. You'll have about 30 cupcakes
  • Combine cake mix, flour, sugar and salt in large mixing bowl. Add remaining ingredients and mix on low speed until combined–about 4 minutes.
  • Pour into prepared pans and bake for 20-22 minutes, or until toothpick, inserted into center, comes out clean. Cool in pans for 5 minutes. Remove and cool on wire rack until completely cool.
  • When cool, pipe in filling, if using, then frost with buttercream icing. Decorate with jimmies, sprinkles, flowers, etc.

Notes

  • I love how versatile these cupcakes can be.  They’re great just simply frosted or with a tasty filling added.  Some ideas:
    • Add a 1/4 cup of raspberry preserves to a cup of the frosting and blend to create a raspberry cream filling.  Using a small tip and piping bag, pipe directly into top of cooled cupcake. Don’t worry about the hole–you’ll cover that when you frost.
    • Apricot preserves are another great filling, or simply use the buttercream frosting, tinted with food coloring to create a  surprise color inside.
    • For the sprinkle lovers, mix multi color jimmies into the batter before baking. Frost with buttercream and add more sprinkles to the top.
    • You can get very creative and pipe frosting roses onto the top, or add edible flowers as garnish.  These cupcakes are a simple tasty palette for whatever your imagination wants to create.
