Cheesy Brown Butter Orzo

Toasting the orzo in browned butter creates a versatile and tasty side dish that's ready in minutes

Ingredients
  

  • 2 cups low-sodium chicken broth
  • 2 tbsp unsalted butter
  • 1 cup orzo
  • 1/3 cup dry sherry
  • 1/4 tsp black pepper
  • 1/3 cup Parmigiano Reggiano
  • fresh parsley for garnish

Instructions
 

  • In a small saucepan, bring chicken broth to a simmer over medium heat
  • In a medium saucepan, cook the butter over medium heat, stirring occasionally until you see tiny brown flakes begin to form. Pull the pan off of the heat. Add the orzo and stir to coat well.
  • Return the pan to medium heat and cook orzo until it turns a light golden color, about 2-3 minutes. Add sherry and stir 1 minute until absorbed. Add the simmering chicken broth, stir, cover and reduce heat to low. Cook 12-13 minutes. (Mixture will be very wet, but it will set up)
  • Stir the orzo, season with black pepper and mix in cheese. Cover and let rest 5 minutes. Garnish with parsley and serve.

Notes

  • Do not be tempted to add salt.  The chicken broth, sherry and cheese are salty enough to flavor the orzo well.
