Chunky Cherry Chocolate Cookies
Oatmeal, cherries and dark chocolate in a soft chewy cookie
Ingredients
- 1 cup unsalted butter at room temperature
- 1 cup light brown sugar
- 2 eggs
- 2 tsp vanilla extract
- 3 cups old-fashioned rolled oats
- 1 1/2 cups flour
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/4 tsp salt
- 1 cup dark chocolate chip chunks
- 1 cup dried cherries
Instructions
- In a large bowl, cream the butter and brown sugar until smooth. Add eggs and vanilla. Mix well. Stir in oats, baking soda, cinnamon and salt. Stir in flour until combined. Fold in chocolate and cherries.
- Chill the cookie dough in the refrigerator for 30-60 minutes.
- Preheat oven to 350 degrees. Form cookie dough into walnut sized balls. Place onto cookie sheet. Return cookie dough to refrigerator in between batches to keep dough cool.
- Bake for 10 minutes. Remove from oven and cool on cookies sheet for 2 minutes before transferring to a wire rack to cool.
Notes
- Good chocolate and cherries are key to these cookies. I use Ghiradelli 60% cacao chips and Cherry Republic Montmorency dried cherries. Kirkland cherries may also work. You want dried cherries that are still plump and soft.
