Haluski with Kielbasa
Traditional haluski is just fried cabbage and noodles. My recipe includes some extras like kielbasa, sauerkraut and mustard. While not traditional, it's a quick, winter, one pot meal
Ingredients
- 4 ounces uncooked noodles
- 4 slices bacon, chopped
- 14 ounces kielbasa, sliced into rounds
- 1 1/2 cups chopped onion
- 1 tbsp butter, divided
- 4 cups shredded cabbage
- 1 tsp caraway seeds
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 cup mustard
Instructions
- Cook noodles according to package directions. Drain and set aside.
- While noodles are cooking, in a large skillet, brown bacon and kielbasa until bacon is crisp and kielbasa starts to brown. Remove from skillet and set aside.
- In the remaining bacon grease, sauté onion and cook until golden. Add a half tablespoon of butter, cabbage, salt, pepper and caraway seeds. Sauté for 2-3 minutes. Add one cup of drained sauerkraut and cook 5 minutes more.
- Remove from heat and stir in kielbasa, half tablespoon butter, noodles and mustard. Serve immediately.
Notes
- A small bag of coleslaw mix cab easily be substituted for the shredded cabbage.
- Mustard type is your personal choice. I like a spicy brown. My husband prefers honey mustard. We usually use a combination of both. If mustard isn’t your favorite condiment, simply omit.
