Haluski with Kielbasa
Traditional haluski is just fried cabbage and noodles. My recipe includes some extras like kielbasa, sauerkraut and mustard. While not traditional, it's a quick, winter, one pot meal

- 4 ounces uncooked noodles
- 4 slices bacon, chopped
- 14 ounces kielbasa, sliced into rounds
- 1 1/2 cups chopped onion
- 1 tbsp butter, divided
- 4 cups shredded cabbage
- 1 tsp caraway seeds
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/4 cup mustard
Cook noodles according to package directions. Drain and set aside.
While noodles are cooking, in a large skillet, brown bacon and kielbasa until bacon is crisp and kielbasa starts to brown. Remove from skillet and set aside.
In the remaining bacon grease, sauté onion and cook until golden. Add a half tablespoon of butter, cabbage, salt, pepper and caraway seeds. Sauté for 2-3 minutes. Add one cup of drained sauerkraut and cook 5 minutes more.
Remove from heat and stir in kielbasa, half tablespoon butter, noodles and mustard. Serve immediately.
- A small bag of coleslaw mix cab easily be substituted for the shredded cabbage.
- Mustard type is your personal choice. I like a spicy brown. My husband prefers honey mustard. We usually use a combination of both. If mustard isn't your favorite condiment, simply omit.
