Orange Ricotta Cookies
Typically ricotta cookie are flavored with lemon, but I like the orange flavor particularly at Christmas.
Ingredients
Cookies
- 2 1/2 cups flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup sugar
- 1/2 cup butter, at room temperature
- 2 eggs
- 8 ounces whole milk ricotta
- 1/2 tsp vanilla
- 2 tsp orange zest
Glaze
- 1/4 cup fresh orange juice
- 1 tsp orange zest
- 3 cups powdered sugar
Instructions
- Preheat oven to 325 degrees. Line two cookies sheets with parchment paper.
- In a medium bowl, whisk flour, baking powder and salt together. Set aside.
- In a large mixing bowl, beat butter and sugar until fluffy, about 3 minutes. Add eggs, one at a time and mix well. Add ricotta, vanilla and zest and mix well.
- Add flour mixture and mix on low until combined. Refrigerate dough for 15 minutes.
- Using a small cookie scoop, place scoops of cookie onto baking sheets. Bake for 18-20 minutes until cookies are lightly golden. Remove from oven and cool completely on wire racks.
- Combine glaze ingredients in a small bowl. Adjust ratio of sugar and juice to make a thickened glaze. Dip tops of cookies in glaze and dry on a wire rack. Allow 2 hours for glaze to harden on cookies before storing.
Notes
- To freeze, store unglazed cookies between layers of wax paper for up to 3 months. Thaw completely before glazing.
