Ingredients

Cookies

  • 2 1/2 cups flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup sugar
  • 1/2 cup butter, at room temperature
  • 2 eggs
  • 8 ounces whole milk ricotta
  • 1/2 tsp vanilla
  • 2 tsp orange zest

Glaze

  • 1/4 cup fresh orange juice
  • 1 tsp orange zest
  • 3 cups powdered sugar

Instructions

  • Preheat oven to 325 degrees. Line two cookies sheets with parchment paper.
  • In a medium bowl, whisk flour, baking powder and salt together. Set aside.
  • In a large mixing bowl, beat butter and sugar until fluffy, about 3 minutes. Add eggs, one at a time and mix well. Add ricotta, vanilla and zest and mix well.
  • Add flour mixture and mix on low until combined. Refrigerate dough for 15 minutes.
  • Using a small cookie scoop, place scoops of cookie onto baking sheets. Bake for 18-20 minutes until cookies are lightly golden. Remove from oven and cool completely on wire racks.
  • Combine glaze ingredients in a small bowl. Adjust ratio of sugar and juice to make a thickened glaze. Dip tops of cookies in glaze and dry on a wire rack. Allow 2 hours for glaze to harden on cookies before storing.

Notes

  • To freeze, store unglazed cookies between layers of wax paper for up to 3 months. Thaw completely before glazing.
