Salmon Patties
These are also known as salmon croquettes, but my family always called them salmon patties. Roasted sweet potatoes make a tasty side dish for a quick weeknight meal.
Ingredients
- 12 ounces boneless, skinless salmon
- 1/4 cup panko bread crumbs
- 1 egg
- 3 green onions, chopped
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp garlic powder
- 1/4 tsp dillweed
- 2 tbsp chopped parsley
- 1 tbsp canola oil
Instructions
- In a large bowl, combine all ingredients. Using hands, form mixture into four patties.
- In a non-stick skillet, heat 1 tablespoon oil and brown each patty for 5-6 minutes per side.
- Serve with Dijon mayo. (see note below)
Notes
- Dijon Mayonnaise makes a quick condiment for the salmon patties. Combine 2 tablespoons mayonnaise, 1 teaspoon Dijon mustard, and 1/4 tsp dillweed.
