Salmon Patties

These are also known as salmon croquettes, but my family always called them salmon patties. Roasted sweet potatoes make a tasty side dish for a quick weeknight meal.

Ingredients
  

  • 12 ounces boneless, skinless salmon
  • 1/4 cup panko bread crumbs
  • 1 egg
  • 3 green onions, chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp dillweed
  • 2 tbsp chopped parsley
  • 1 tbsp canola oil

Instructions
 

  • In a large bowl, combine all ingredients. Using hands, form mixture into four patties.
  • In a non-stick skillet, heat 1 tablespoon oil and brown each patty for 5-6 minutes per side.
  • Serve with Dijon mayo. (see note below)

Notes

  • Dijon Mayonnaise makes a quick condiment for the salmon patties. Combine 2 tablespoons mayonnaise, 1 teaspoon Dijon mustard, and 1/4 tsp dillweed.
