Sweet and Spicy Roasted Brussel Sprouts
A local chef shared his recipe with me which called for sriracha and honey. I was out of sriracha one day and subbed red pepper jelly. Now I use both for a combination of sweet and spicy.
Ingredients
- 6 slices thick bacon, or pancetta chopped
- 1 pound brussel sprouts, halved
- 2 tbsp olive oil
- 3/4 tsp salt
- 1/2 tsp pepper
- 4 tbsp red pepper jelly
- 1 tsp sriracha
- 1 tbsp honey
- 2 ounces goat cheese
Instructions
- Preheat oven to 425 degrees. Place sprouts and bacon on a large baking sheet. Drizzle with oil and sprinkle with salt and pepper. Stir to coat.
- Roast in oven for 20 minutes, stirring occasionally.
- Meanwhile, combine jelly and honey and whisk until well combined. Add more sriracha or jelly according to taste.
- Serve sprouts with sauce drizzled over and goat cheese sprinkled on top.
