Preheat oven to 450 degrees. Grease a pizza pan and set aside.
Prepare toppings before crust. In a small bowl, combine chicken with 1/2 cup barbecue sauce. Set aside. In a medium skillet, cook bacon until crisp. Remove bacon to plate and crumble when cool.
Saute 2/3 of the onion slices in bacon grease along with garlic. Add bacon back to the pan. Set aside. Shred cheeses.
Prepare crust. In a large mixing bowl, combine water, sugar and yeast stirring until combined. Let mixture sit for 5 minutes.
Add olive oil to yeast mixture and stir to combine. Add four and salt and mix with a spatula until dough begins to form a ball.
Transfer dough to a well-floured surface and knead into a smooth dough, adding more flour as needed. Roll dough into large circle and transfer to greased pan.
Prick the all around the surface of the dough with a fork . Bake on lower oven rack for 5 minutes to prebake crust. Remove from oven Prick crust again if air bubbles have formed.
Add ingredients beginning with 1/2 cup sauce, 1/2 of the cheese, the bacon mixture, chicken, 1/2 of the cheese, reserved raw onion slices and spices.
Bake on the lower oven rack for 15-20 minutes, until crust is lightly browned. Let cool for 5 minutes, cut and serve.
