Remove butter from freezer and grate or chop.
In a large bowl, mix flour, sugar, baking powder, baking soda and salt. Add frozen butter to dry ingredients and mix until combined.
Stir in cherries and pistachios. Add buttermilk and stir just until combined.
Turn out dough onto a lightly floured surface and pat into a circle or rectangle. Cut into 8 pieces.
Cover cut pieces with plastic wrap or place in bags to freeze long term. Freeze cut pieces for 15 minutes, or up to one month.
When ready to bake, preheat oven to 400 degrees. Place scones onto a parchment lined baking sheet and brush with heavy cream and sprinkle with sugar,
