Classic Macaroni and Cheese
The epitome of comfort food! Great as a side, or on its own with a leafy veggie salad. Vary the cheeses to taste.

- 2 cups macaroni, or similar pasta
- 3 tbsp unsalted butter
- 1/2 cup finely, chopped onion
- 2 tbsp flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 1/4 cups milk
- 3 cups shredded cheese (cheddar, mozzarella, Monterey Jack, etc)
Preheat oven to 350 degrees. Coat a 9x13 baking dish with cooking spray
Cook the macaroni according to package directions; drain.
Meanwhile, in a medium sauce pan melt butter. Cook onion in butter until tender. Stir in flour, salt and pepper. Add milk all at once and stir until thickened and bubbly
Remove saucepan from hear and stir in 2 1/2 cups of cheese until melted.
Combine cheese and macaroni and pour into prepared baking dish. Sprinkle with remaining cheese.
Bake at 350 degrees for 30 minutes
