Lemon Pan Seared Fish
Tangy lemon pan seared filets finished in the oven

- 1 pound fish fillets (cod or haddock)
- 4 cloves garlic, minced
- 1/4 cup chopped herbs (cilantro, basil, or parsley
- 2 lemons, juiced
- 4 tbsp olive oil
- 2 tbsp melted butter
- 1/4 cup flour
- 3/4 tsp ground corriander
- 1 tsp smoked paprkia
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1/2 tsp black pepper
Preheat oven to 400 degrees
Mix lemon juice, oil and melted butter. Set aside
Mix flour and spices in another bowl.
Pat fish fillets dry. Dip fish in the lemon mixture and then dip in flour. Shake off excess flour. Reserve remaining lemon juice mixture
Heat 2 tbsp olive oil in oven-proof skillet (cast iron is best) over medium heat. Add fish and sear 1-2 minutes each side.
Remove from heat. Add garlic to reserved lemon juice mixture and pour over fish.
Bake for 10 minutes. Sprinkle with chopped herbs
