Lemon Pan Seared Fish

Tangy lemon pan seared filets finished in the oven

Ingredients
  

  • 1 pound fish fillets (cod or haddock)
  • 4 cloves garlic, minced
  • 1/4 cup chopped herbs (cilantro, basil, or parsley
  • 2 lemons, juiced
  • 4 tbsp olive oil
  • 2 tbsp melted butter
  • 1/4 cup flour
  • 3/4 tsp ground corriander
  • 1 tsp smoked paprkia
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Preheat oven to 400 degrees
  • Mix lemon juice, oil and melted butter. Set aside
  • Mix flour and spices in another bowl.
  • Pat fish fillets dry. Dip fish in the lemon mixture and then dip in flour. Shake off excess flour. Reserve remaining lemon juice mixture
  • Heat 2 tbsp olive oil in oven-proof skillet (cast iron is best) over medium heat. Add fish and sear 1-2 minutes each side.
  • Remove from heat. Add garlic to reserved lemon juice mixture and pour over fish.
  • Bake for 10 minutes. Sprinkle with chopped herbs

Notes

  • Change up the herbs and spices, to taste--whatever you think will complement your particular fish.
