Peanut Butter Cookies
A classic cookie that is soft and simply melts in your mouth.

- 1 1/2 cups flour
- 1/4 tsp salt
- 3/4 tsp baking powder
- 1/2 cup butter, at room temperature
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 cup creamy peanut butter
- 1 1/2 tsp vanilla extract
- 1 large egg, at room temperature
Preheat oven to 350 degrees and line baking sheets with parchment paper, or Silpat. Set aside.
Combine flour, salt, baking powder in small bowl. Set aside.
In large mixing bowl, cream butter and sugars until well combined. Add peanut butter, egg and vanilla and thoroughly combine.
Roll dough into balls--about 1 inch--and place on baking sheet two inches apart. Flatten balls with a fork creating a criss-cross pattern on top.
Bake cookies for 10 minutes at 350 degrees. Allow to cool on cookie sheet for one minute before transferring to a cooling rack. Let cool completely.
Store cookies in an airtight container.
