Roasted Balsamic Brussel Sprouts
These are not the mushy Brussel sprouts of your childhood. These are tangy, roasted goodness that are a great side dish with grilled meat or salmon.

- 1 1/2 pounds Brussel sprouts
- 3 tbsp olive oil
- 1 tsp kosher salt
- 3/4 tsp black pepper
- 2 tbsp balsamic vinegar
- 2 tsp honey
Preheat oven to 425 degrees.
Cut off stems and halve Brussel sprouts. Toss sprouts with 2 tablespoons of olive oil, salt and pepper.
Spread onto baking sheet. Roast in oven, stirring occasionally for 20 minutes, or until caramelized.
Remove from oven. Place sprouts back into bowl with remaining oil, honey and vinegar. Toss evenly.
Spread onto baking sheet again, and return to oven to roast for 3-5 minutes longer
- I often roast these ahead of time and have them in the refrigerator to quickly reheat for lunch or dinner.
- Roasting some thinly sliced onions with the Brussel sprouts until caramelized is also good.
