Stuffed Apricots

Bite size apricots that are both savory and sweet

Servings 30 apricots

Ingredients
  

  • 4 ounces cream cheese, softened
  • 2 tbsp orange marmalade
  • 30 softened dried whole apricots
  • 2 tbsp pecans, finely chopped

Instructions
 

  • In a small bowl, mix cream cheese and marmalade. Set aside
  • Gently open apricots by hand, or use a small knife to create a pocket along one side. The apricot should resemble a partially opened clamshell
  • Fill each apricot with cream cheese mixture. Roll cream cheese edge in chopped pecans.
