Stuffed Apricots

Bite size apricots that are both savory and sweet
Prep Time 30 minutes mins
- 4 ounces cream cheese, softened
- 2 tbsp orange marmalade
- 30 softened dried whole apricots
- 2 tbsp pecans, finely chopped
In a small bowl, mix cream cheese and marmalade. Set aside
Gently open apricots by hand, or use a small knife to create a pocket along one side. The apricot should resemble a partially opened clamshell
Fill each apricot with cream cheese mixture. Roll cream cheese edge in chopped pecans.
