Tarragon Chicken Salad--Christmas Tea

A delicious salad that can be eaten alone, or spread on bread for pretty tea sandwiches
Prep Time 2 hours hrs 30 minutes mins
Cook Time 15 minutes mins
- 2 large chicken breasts, approximately 1.5 lbs total
- 1/2 cup onion, finely minced
- 1/2 cup celery, finely minced
- 1/2 tsp salt
- 1/4 tsp pepper
- 3 tbsp dried tarragon
- 1 cup mayonaisse
- 3/4 cup sliver almonds, toasted
- 1 cup red grapes, cut in halves or fourths
In a medium pot, simmer chicken breasts in water on stove top until cooked through (Do not boil or chicken will be tough) While chicken is still warm, shred using two forks. Allow chicken to cool
Combine cooled chicken with onion, celery, spices and mayo. Chill for a few hours to allow the flavors to mingle.
When ready to serve, stir in almonds and grapes. Adjust seasonings to taste.
