Basic Chili

Ask anyone to describe their favorite chili and you'll get a list of varied ingredients, heat levels, meat, beans, no beans, etc. This is my basic recipe and it's a good place to start.

Servings 4 servings

Ingredients
  

  • 1 pound lean ground beef
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 14 oz can diced tomatoes
  • 1 15oz can tomato sauce
  • 1 15 oz can pinto beans
  • 1 15oz can dark red kidney beans
  • 1 1/2 tbsp chili powder, ancho or regular
  • 2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp onion powder
  • 1/2 tsp garlic powder
  • 1 tbsp sugar
  • 2 tsp salt
  • 1 tsp pepper

Instructions
 

  • In a large stockpot, brown ground beef. Add onion and garlic and cook until onion is translucent.
  • Add the rest of the ingredients to pot. Stir and let come to boil.
  • Reduce heat and let simmer for 1 hour.
  • Top with cheddar cheese, green onion, sour cream or other garnish.

Notes

  • Chili leftovers are so versatile. 
    • Serve over tortilla chips with all of your favorite nacho toppings. 
    • Add cooked macaroni to leftover chili, sprinkle with cheddar cheese and bake until bubbly.
    • Chili can be frozen for up to 3 months
