Basic Chili
Ask anyone to describe their favorite chili and you'll get a list of varied ingredients, heat levels, meat, beans, no beans, etc. This is my basic recipe and it's a good place to start.

- 1 pound lean ground beef
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 14 oz can diced tomatoes
- 1 15oz can tomato sauce
- 1 15 oz can pinto beans
- 1 15oz can dark red kidney beans
- 1 1/2 tbsp chili powder, ancho or regular
- 2 tsp cumin
- 1/2 tsp smoked paprika
- 1/2 tsp onion powder
- 1/2 tsp garlic powder
- 1 tbsp sugar
- 2 tsp salt
- 1 tsp pepper
In a large stockpot, brown ground beef. Add onion and garlic and cook until onion is translucent.
Add the rest of the ingredients to pot. Stir and let come to boil.
Reduce heat and let simmer for 1 hour.
Top with cheddar cheese, green onion, sour cream or other garnish.
- Chili leftovers are so versatile.
- Serve over tortilla chips with all of your favorite nacho toppings.
- Add cooked macaroni to leftover chili, sprinkle with cheddar cheese and bake until bubbly.
- Chili can be frozen for up to 3 months
