BBQ Chicken PIzza
Combine leftover chicken with barbecue sauce, smoked cheese, onion and bacon to create a quick tasty pizza
Ingredients
For crust
- 1 cup warm water (105-110 degrees)
- tbsp sugar
- 1 tbsp active dry yeast
- 1 tbsp olive oil
- 2 1/2 cups flour (additional flour for kneading)
- 1 tsp salt
Toppings
- 2 cups cooked, shredded chicken
- 1 cup barbecue sauce, divided
- 4-5 slices bacon
- 1/2 large red onion, thinly sliced, divided
- 1 tbsp minced garlic
- 3/4 cup smoked gouda, shredded
- 3/4 cup mozzarella, shredded
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp basil
Instructions
- Preheat oven to 450 degrees. Grease a pizza pan and set aside.
- Prepare toppings before crust. In a small bowl, combine chicken with 1/2 cup barbecue sauce. Set aside. In a medium skillet, cook bacon until crisp. Remove bacon to plate and crumble when cool.
- Saute 2/3 of the onion slices in bacon grease along with garlic. Add bacon back to the pan. Set aside. Shred cheeses.
- Prepare crust. In a large mixing bowl, combine water, sugar and yeast stirring until combined. Let mixture sit for 5 minutes.
- Add olive oil to yeast mixture and stir to combine. Add four and salt and mix with a spatula until dough begins to form a ball.
- Transfer dough to a well-floured surface and knead into a smooth dough, adding more flour as needed. Roll dough into large circle and transfer to greased pan.
- Prick the all around the surface of the dough with a fork . Bake on lower oven rack for 5 minutes to prebake crust. Remove from oven Prick crust again if air bubbles have formed.
- Add ingredients beginning with 1/2 cup sauce, 1/2 of the cheese, the bacon mixture, chicken, 1/2 of the cheese, reserved raw onion slices and spices.
- Bake on the lower oven rack for 15-20 minutes, until crust is lightly browned. Let cool for 5 minutes, cut and serve.
