Classic Macaroni and Cheese
The epitome of comfort food! Great as a side, or on its own with a leafy veggie salad. Vary the cheeses to taste.
Ingredients
- 2 cups macaroni, or similar pasta
- 3 tbsp unsalted butter
- 1/2 cup finely, chopped onion
- 2 tbsp flour
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 1/4 cups milk
- 3 cups shredded cheese (cheddar, mozzarella, Monterey Jack, etc)
Instructions
- Preheat oven to 350 degrees. Coat a 9×13 baking dish with cooking spray
- Cook the macaroni according to package directions; drain.
- Meanwhile, in a medium sauce pan melt butter. Cook onion in butter until tender. Stir in flour, salt and pepper. Add milk all at once and stir until thickened and bubbly
- Remove saucepan from hear and stir in 2 1/2 cups of cheese until melted.
- Combine cheese and macaroni and pour into prepared baking dish. Sprinkle with remaining cheese.
- Bake at 350 degrees for 30 minutes
