Classic Macaroni and Cheese

The epitome of comfort food! Great as a side, or on its own with a leafy veggie salad. Vary the cheeses to taste.

Ingredients
  

  • 2 cups macaroni, or similar pasta
  • 3 tbsp unsalted butter
  • 1/2 cup finely, chopped onion
  • 2 tbsp flour
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 1/4 cups milk
  • 3 cups shredded cheese (cheddar, mozzarella, Monterey Jack, etc)

Instructions
 

  • Preheat oven to 350 degrees. Coat a 9×13 baking dish with cooking spray
  • Cook the macaroni according to package directions; drain.
  • Meanwhile, in a medium sauce pan melt butter. Cook onion in butter until tender. Stir in flour, salt and pepper. Add milk all at once and stir until thickened and bubbly
  • Remove saucepan from hear and stir in 2 1/2 cups of cheese until melted.
  • Combine cheese and macaroni and pour into prepared baking dish. Sprinkle with remaining cheese.
  • Bake at 350 degrees for 30 minutes
