Lemon Pan Seared Fish
Tangy lemon pan seared filets finished in the oven
Ingredients
- 1 pound fish fillets (cod or haddock)
- 4 cloves garlic, minced
- 1/4 cup chopped herbs (cilantro, basil, or parsley
- 2 lemons, juiced
- 4 tbsp olive oil
- 2 tbsp melted butter
- 1/4 cup flour
- 3/4 tsp ground corriander
- 1 tsp smoked paprkia
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 1/2 tsp black pepper
Instructions
- Preheat oven to 400 degrees
- Mix lemon juice, oil and melted butter. Set aside
- Mix flour and spices in another bowl.
- Pat fish fillets dry. Dip fish in the lemon mixture and then dip in flour. Shake off excess flour. Reserve remaining lemon juice mixture
- Heat 2 tbsp olive oil in oven-proof skillet (cast iron is best) over medium heat. Add fish and sear 1-2 minutes each side.
- Remove from heat. Add garlic to reserved lemon juice mixture and pour over fish.
- Bake for 10 minutes. Sprinkle with chopped herbs
Notes
- Change up the herbs and spices, to taste–whatever you think will complement your particular fish.
