Sweet Potato and Quinoa Salad

Roasted sweet potatoes, quinoa, and black beans in a lime dressing

Ingredients
  

  • 1 1/2 pounds sweet potatoes, peeled and 1/2 inch cubes
  • 1 onion, rough chopped
  • 4 tbsp olive oil, divided
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/1/2 cups cooked quinoa
  • 2 limes, zest and juice
  • 2 tsp maple syrup, or honey
  • 1 clove minced garlic
  • 1 15oz can black beans, rinsed and drained
  • 1 bell pepper, cored and diced
  • 3/4 cup cilantro, chopped

Instructions
 

  • Preheat oven to 400 degrees
  • Place onion and sweet potato chunks on large baking sheet. Drizzle with 1 tablespoon oil.
  • Combine spice and sprinkle over onions/potatoes. Toss to coat.
  • Bake for 20-25 minutes, tossing halfway through. Remove from oven and set aside.
  • In a small container with lid, combine lime juice, zest, 3 tablespoons oil, garlic and maple syrup. Shake to combine.
  • In a large mixing bowl, combine cooked quinoa, black beans, bell pepper, cilantro, potatoes and onion. Pour dressing over and toss to coat.
  • Best served slightly warm, or at room temperature,
