Peanut Butter Cookies
A classic cookie that is soft and simply melts in your mouth.
Ingredients
- 1 1/2 cups flour
- 1/4 tsp salt
- 3/4 tsp baking powder
- 1/2 cup butter, at room temperature
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 cup creamy peanut butter
- 1 1/2 tsp vanilla extract
- 1 large egg, at room temperature
Instructions
- Preheat oven to 350 degrees and line baking sheets with parchment paper, or Silpat. Set aside.
- Combine flour, salt, baking powder in small bowl. Set aside.
- In large mixing bowl, cream butter and sugars until well combined. Add peanut butter, egg and vanilla and thoroughly combine.
- Roll dough into balls–about 1 inch–and place on baking sheet two inches apart. Flatten balls with a fork creating a criss-cross pattern on top.
- Bake cookies for 10 minutes at 350 degrees. Allow to cool on cookie sheet for one minute before transferring to a cooling rack. Let cool completely.
- Store cookies in an airtight container.
