Red Velvet Peanut Butter Blossoms

Peanut butter blossoms turn up on just about everyone's Christmas cookie tray. I love this red velvet recipe that elevates a simple cookie to a really special cookie.

Ingredients
  

  • 1/2 cup unsalted butter, at room temperature
  • 3/4 cup peanut butter
  • 1 1/3 cup sugar
  • 1 tbsp milk
  • 1 egg
  • 1 tsp red gel food coloring
  • 2 tsp vanilla
  • 1 1/2 cups flour
  • 3 tbsp cocoa powder
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1/3 cup red sanding sugar
  • 60 unwrapped Hershey's Kisses, most of one bag

Instructions
 

  • Preheat oven to 375 degrees. Line baking sheets with parchment paper and set aside.
  • In a large mixing bowl, beat butter, peanut butter and sugar for 3 minutes. Add milk, egg, vanilla and food coloring. Mix until well combined–1-2 minutes.
  • In separate bowl, combine the flour, cocoa, baking soda and salt. Gradually, add to sugar mixture on low speed just until combined.
  • Shape dough into 1-inch balls and place on cookies sheets. Pour sanding sugar into a small bowl. Roll balls in sugar and return to baking sheet.
  • Bake at 375 degrees for 8-10 minutes. As soon as cookies come out of the oven, press a Hershey's Kiss into the center of each cookie. Allow cookies to sit for 1 minute before transferring to a wire rack to cool completely.
