Sweet Potato and Quinoa Salad
Roasted sweet potatoes, quinoa, and black beans in a lime dressing
Ingredients
- 1 1/2 pounds sweet potatoes, peeled and 1/2 inch cubes
- 1 onion, rough chopped
- 4 tbsp olive oil, divided
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp salt
- 1/1/2 cups cooked quinoa
- 2 limes, zest and juice
- 2 tsp maple syrup, or honey
- 1 clove minced garlic
- 1 15oz can black beans, rinsed and drained
- 1 bell pepper, cored and diced
- 3/4 cup cilantro, chopped
Instructions
- Preheat oven to 400 degrees
- Place onion and sweet potato chunks on large baking sheet. Drizzle with 1 tablespoon oil.
- Combine spice and sprinkle over onions/potatoes. Toss to coat.
- Bake for 20-25 minutes, tossing halfway through. Remove from oven and set aside.
- In a small container with lid, combine lime juice, zest, 3 tablespoons oil, garlic and maple syrup. Shake to combine.
- In a large mixing bowl, combine cooked quinoa, black beans, bell pepper, cilantro, potatoes and onion. Pour dressing over and toss to coat.
