Preheat oven to 400 degrees
Place onion and sweet potato chunks on large baking sheet. Drizzle with 1 tablespoon oil.
Combine spice and sprinkle over onions/potatoes. Toss to coat.
Bake for 20-25 minutes, tossing halfway through. Remove from oven and set aside.
In a small container with lid, combine lime juice, zest, 3 tablespoons oil, garlic and maple syrup. Shake to combine.
In a large mixing bowl, combine cooked quinoa, black beans, bell pepper, cilantro, potatoes and onion. Pour dressing over and toss to coat.
Best served slightly warm, or at room temperature,
