Apple Walnut Snack Cake
I learned to make this simple snack cake in my junior high home economics class. It's been a quick and simple fall dessert in our house ever since.

- 2 eggs
- 1 1/4 cups sugar
- 1 tsp vanilla
- 1/4 cup unsweetened applesauce
- 1 1/2 cup flour
- 1/4 tsp cinnamon
- 1 tsp baking powder
- 1/4 tsp salt
- 2 cups chopped, tart apples
- 1/2 cup walnuts, chopped
Preheat oven to 350 degrees. Butter a 11x7 inch baking dish and set aside
In a large mixing bowl, combine eggs and sugar. Add vanilla and applesauce.
In a medium mixing bowl, whisk together flour, baking powder, cinnamon, and salt.
Stir in apples and walnuts. Spread evenly in baking dish.
Bake at 350 degrees for 35 minutes or until toothpick inserted into center is dry.
- Such a simple flavorful cake. Use whatever apples you have on hand--Jonathan or McIntosh are my favorite fall apples. No need to peel the apples--just core and chop.
