Apple Walnut Snack Cake

I learned to make this simple snack cake in my junior high home economics class. It's been a quick and simple fall dessert in our house ever since.

Ingredients
  

  • 2 eggs
  • 1 1/4 cups sugar
  • 1 tsp vanilla
  • 1/4 cup unsweetened applesauce
  • 1 1/2 cup flour
  • 1/4 tsp cinnamon
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 cups chopped, tart apples
  • 1/2 cup walnuts, chopped

Instructions
 

  • Preheat oven to 350 degrees. Butter a 11×7 inch baking dish and set aside
  • In a large mixing bowl, combine eggs and sugar. Add vanilla and applesauce.
  • In a medium mixing bowl, whisk together flour, baking powder, cinnamon, and salt.
  • Stir in apples and walnuts. Spread evenly in baking dish.
  • Bake at 350 degrees for 35 minutes or until toothpick inserted into center is dry.

Notes

  • Such a simple flavorful cake. Use whatever apples you have on hand–Jonathan or McIntosh are my favorite fall apples. No need to peel the apples–just core and chop.
