Chocolate Krispy Treats
Leftover chocolate krispy cereal combined with extra chocolate and marshmallow yields a gooey, rich treat.

- 6 ounces butter
- 16 ounces mini marshmallows, divided
- 1/3 cup cocoa powder
- 1 cup chocolate chips
- 13 ounces chocolate krispy cereal (see note)
Divide marshmallows. Place 10 ounces in a large bowl--reserve the rest. Butter a 9" x13" pan and set aside.
In a large saucepan over medium heat, melt the butter. Add 10 oz of marshmallows and stir until melted.
Add chocolate chips and cocoa powder. Mix until fully melted. Add rice and reserved marshmallows. Mix until cereal is well coated.
Press into prepared pan and spread evenly with hand or spatula. Cover and let cool for one hour before cutting into bars.

- You can use any chocolate rice cereal, but I prefer Mom's Best Crispy Cocoa Rice made with no artificial flavors.
- Surprisingly these freeze well. Cut into individual bars and wrap in foil. Place foil wrapped treats in a plastic freezer bag and freeze for up to one month. Thaw at room temperature for 30 minutes.
