Yankee Cornbread

Southerners will argue that this isn't real cornbread since it includes sugar. I only like my cornbread sweet so that's the way I make it.

Ingredients
  

  • 1 cup flour
  • 1 cup cornmeal
  • 1/2 cup sugar
  • 1 tsp salt
  • 3 1/2 tsp baking powder
  • 1 egg
  • 1 cup milk
  • 1/3 cup canola oil

Instructions
 

  • Preheat oven to 400 degrees. Grease bottom and sides of a 9-inch cake pan.
  • In a large bowl, combine all ingredients. Pour into prepared pan,
  • Bake for 20-25 minutes until a toothpick inserted in center comes clean
  • Let cool 15 minutes before cutting into squares.
