Apple Walnut Snack Cake
I learned to make this simple snack cake in my junior high home economics class. It's been a quick and simple fall dessert in our house ever since.
Ingredients
- 2 eggs
- 1 1/4 cups sugar
- 1 tsp vanilla
- 1/4 cup unsweetened applesauce
- 1 1/2 cup flour
- 1/4 tsp cinnamon
- 1 tsp baking powder
- 1/4 tsp salt
- 2 cups chopped, tart apples
- 1/2 cup walnuts, chopped
Instructions
- Preheat oven to 350 degrees. Butter a 11×7 inch baking dish and set aside
- In a large mixing bowl, combine eggs and sugar. Add vanilla and applesauce.
- In a medium mixing bowl, whisk together flour, baking powder, cinnamon, and salt.
- Stir in apples and walnuts. Spread evenly in baking dish.
- Bake at 350 degrees for 35 minutes or until toothpick inserted into center is dry.
Notes
- Such a simple flavorful cake. Use whatever apples you have on hand–Jonathan or McIntosh are my favorite fall apples. No need to peel the apples–just core and chop.
